Yusen Sujihiki Knife, Molybdenum Special Steel, 20cm Blade Length
66.00 $
Description
This is a Sukenari sujihiki knife.
The blade length is approximately 20cm.
The steel is molybdenum special steel.
The handle has a bolster.
Although it is a sujihiki knife, it has a wide blade, making it feel like it's between a sujihiki and a gyuto.
The blade is also thick, so it can be used similarly to a gyuto (all-purpose).
There is a small chip on the end of the handle.
We recommend it if you don't mind this.
As expected from Sukenari, it cuts very well.
It also has sufficient cutting edge, so we believe it can be used for a long time.
The cutting edge is mirror polished, and the flats are also mirror polished.
The weight balance is good, and the size makes it recommended for professionals as well as general households.
The knife has been finished with a Kitayama 8000 grit whetstone, a Shapton 12000 grit whetstone, and a natural whetstone.
It is in a very sharp condition and ready for immediate use.
● Size: Blade length approx. 20cm
● Blade thickness: Approx. 2mm at the thickest part at the heel
● Overall length: 32cm
● Weight: 155g
