This is Matsumae Surume, made from fresh Japanese-caught squid.

While some dried squid is made from imported squid dried in Hokkaido,
this surume uses domestically produced squid as its raw ingredient.
The body length is approximately 23cm, and about 46cm including the legs, making it an extra-large size.

Please choose based on weight and quality, not just the number and length of the surume.
Heavier ones are more expensive, lighter ones are cheaper, and larger ones are thicker and tastier.
Also, the white powder on the surface is not mold but umami components.
The more umami components a surume has, the more white powder will appear when stored at room temperature.
As a special tip, simmering it with daikon radish or other vegetables will enhance the umami more than fresh squid.
